How to Scale a Recipe Correctly
- Scale the factor first: target servings ÷ original servings. This number multiplies every ingredient.
- Scale most ingredients linearly: flour, water, sugar, oil, dairy, vegetables — these scale cleanly. The math is safe.
- Hold salt by weight: for brines and ferments, salt is a percentage of total batch weight (typically 2% for lacto-fermentation). Use our Pickle Brine Calculator for exact salt grams.
- Cut the yeast: double batch → ~1.5x yeast; triple → ~2x yeast. Not the full factor.
- Add spices to taste: for large jumps, add ~50% of the factor for pungent spices, then taste before adding more.
- Watch the pan, not the clock: doubling into two pans bakes in about the same time. One larger pan needs longer — check with a thermometer.
- Don't touch fermentation time: batch size does not change fermentation rate. Temperature does.
